This cake is cut in half horizontally and top with a sprinkling of powder sugar. This typical French dessert is made to commemorate the Paris-Brest-Paris bicycle race. That’s where this cake got its name. Moreover, the cake is a kind of bicycle wheel. This cake was create in 1910 by pastry chef Louis Durand as a tribute to the Paris-Brest-Paris long distance bicycle race. The shape of the cake circle is meant to depict a bicycle wheel.
